If scoop ice cream is too warm it becomes soft and melts (and nobody enjoys melted ice cream, do they). If it is too cold it is very difficult to scoop out without bending your scoop and when it is served into a ice cream cone it doesn't display well. It is essential to maintain scoop ice cream at around -14°C, this is the temperature that is considered optimal. Ice cream at -14°C is said to be 'plastic' which is a description of the ice cream consistency and simply means it is easy to be scooped into an ice cream cone.
