If it is too cold it is very difficult to scoop out without bending your scoop and when it is served into a ice cream cone it doesn't display well. It is essential to maintain scoop ice cream at around -14°C, this is the temperature that is considered optimal. Ice cream at -14°C is said to be 'plastic' which is a description of the ice cream consistency and simply means it is easy to be scooped into an ice cream cone.
